We happen to be big proponents of letting certain foods speak for themselves. Sort of akin to enjoying bourbon neat, with no added flavors or accouterment - some things are just better left untouched. However, even some of those foods or drinks, on occasion, can be given a flavorful boost too good to ignore. In those cases, we will allow modifications that get even more out of the food in question.

Enter Cornmeal-Crusted Bacon. The name alone has probably gotten your mouth watering, and trust us when we say, this one will deliver.

A savory and subtly sweet crispy coating and thick and crunchy exterior make each bite a flavorful delight. We used thick slabs of butcher-cut bacon, and naturally, our Pappy & Company Heirloom Cornbread Mix

Earthy, yet mild, our heirloom cornmeal is grown and harvested by Marsh Hen Mill in Edisto, South Carolina. A low country specialty, they are dedicated to the traditional stone ground method, making heirloom cornmeal the old-fashioned way and you can taste the difference.

Chef’s Hint: Feeling creative? Experiment! Go sweet and savory, and add a dash of our Pappy Van Winkle Bourbon Barrel-Aged Pure Maple Syrup, with the rich and buttery unmistakable bourbon-like hints of vanilla, caramel, and charred oak. Or, for a dash of sweet heat, try our Pappy Van Winkle Bourbon Barrel-Aged Pepper Sauce or Pappy Van Winkle Bourbon Barrel-Aged Spicy Maple Syrup. Subtle, yet distinct, both are infused with the kick of our Georgia-grown Midland Ghost, ghost peppers aged in our retired Pappy Van Winkle Bourbon barrels, for an extra infusion of flavor. 

 

Cornmeal Crusted Bacon

With a natural sweetness that is delicate and subtle in both its flavor and the layers of texture that it adds, our Pappy & Company Heirloom Cornmeal is the star of the show in this Cornmeal Crusted Bacon recipe.


Serve alongside Brunch and Bloody Mary’s, or add to a salad for extra flavor and crunch. Of course, we like to serve ours as a side to Sunday morning pancakes, topped with melting butter and a drizzle of our Pappy Van Winkle Bourbon Barrel-Aged Pure Maple Syrup.

Ingredients

  • ⅓ cup Pappy & Company Heirloom Cornmeal
  • ¼ cup firmly packed light brown sugar
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground red pepper
  • 12 thick bacon slices
  • Cooking spray

Directions

  1. Stir together the cornmeal, brown sugar, cumin, and red pepper.
  2. Dredge the bacon in the cornmeal mixture, shaking off the excess as you go.
  3. Coat a wire rack with cooking spray and arrange the bacon in a single layer.
  4. Line a jelly-roll pan with foil and place the wire rack inside.
  5. Bake 40-50 minutes at 400 degrees until desired crispness.
