Our new Bourbon Barrel Smoked Sea Salt, made in partnership with Charleston-based  Bulls Bay Saltworks, is the meeting of exactly those two philosophies.

What Makes This Salt Different

The secret is in the smoke. Our Bourbon Barrel Smoked Sea Salt is gently smoked using the staves from Pappy Van Winkle barrels — the very wood that held some of the world's most celebrated bourbon as it aged and mellowed over the years. Those staves carry decades of character: the vanilla, oak, and caramel that define Pappy Van Winkle's legendary flavor profile. When Bulls Bay's pure Carolina sea salt is smoked over that wood, it absorbs a flavor you simply cannot replicate with any other ingredient.
The result is a salt with a deep, complex smokiness softened by a sweet bourbon finish. It's subtle. It's layered. And it's entirely one-of-a-kind.

How to Use It

This isn't a salt you'll want to hide in the back of the cabinet. It belongs front and center.

On the grill: Finish your steaks, pork chops,
 or grilled chicken with a generous pinch just before serving. The bourbon smoke plays beautifully against charred meat.

Founded on May 31, 2012, Bulls Bay Saltworks was born the old-fashioned way: at a backyard hog roast in Charleston, South Carolina, where a homemade batch of smoked sea salt stole the show. What started as a homesteading experiment has grown into one of the most celebrated artisan salt producers in the country, featured in Bon Appétit, Food & Wine, Oprah Magazine, The New York Times, and Southern Living.

The Goodens harvest their salt from Bulls Bay, located within the Cape Romain National Wildlife Refuge — a Class One Wilderness Area and home to one of the healthiest saltwater ecosystems on the Eastern Seaboard. The water is filtered naturally by the bay's thriving oyster clusters and clams, producing sea salt with exceptional purity and a distinctive coastal flavor.

Their process is as intentional as it is beautiful: salt crystals are grown in a solar greenhouse on their homestead, harvested by hand in small batches, and dried using nothing but solar and wind energy. No shortcuts. No compromise. Just premium, woman-owned, American-made sea salt with a minimal carbon footprint.
